I was wondering if members would want to share the recipes they use for Meal Prep? I thought I would start a thread to ask.

My main meal prep meal is Chicken tittys, Rice, and broccoli or spinach. But would like to mix it up once in awhile.

I’ve recently just been doing something a little different lately.

Trim the shit off the chicken breast

Toss them all in a Instapot w some seasoning & chicken stock for the liquid.

Cook on high pressure cook (the more you have the longer it takes. I used a whole Costco pack last week & set it for 45 mins)

The chicken should fall apart afterwards
Take your electric beater/mixer or something similar and shred it up to a fine almost pulled pork consistency.

Toss your favorite SF bbq sauce in there (I leave it plain and add the sauce in my dishes as I eat them.

This isn’t the greatest thing in the world or anything, but it’s another way to make it & have it not dry out by the middle of the week like the traditional marinated/grilled chicken.

The chicken stock keeps it juicy & rice mixes really nicely with it as well.

Only issue I’m having is weighing it out for my meals because it’s got that liquid content which adds more weight, so I’m playing with that now. I typo do 210 G protein per meal so I been doing 240g to try to make it close.

I’m a pretty plain guy for my meal prep. I still enjoy the food, but I mainly prep my stuff on Sundays & the easier and more Time consuming it is the better for me.

Sounds like a super easy way to shred the chicken for burrito bowls or something similar also.
